summer gazpacho.

i've had a hankering for gazpacho lately, so made some some this weekend. i kind of had fun with the ingredients, and just added as i went along.

here's what i used:

-3 medium-sized tomatoes off the vine and a little less than a pound of heirloom tomatoes
-a large handful of basil (i'd use cilantro next time, the market just didn't have any that looked good)
-2 small jalapenos
-half of a seedless cucumber peeled (save the other half for garnishing)
-1 small red onion
-2 small cloves of garlic
-a tablespoon-ish of white basalmic vinegar
-a generous helping of olive oil
-salt, pepper and a tiny dash of smoked white pepper

this is a great dish to have in the fridge in the middle of a very hot august. i think i'll try to experiment and make a few more batches before summer's end.
