farmers market beet sandwiches.
we've been hitting up a lot of farmers markets lately, so last night i decided we needed to do something with our food before it went to waste. i decided to make vegetarian sandwiches. here's what i did: roasted the golden beets in the oven (wrapped in tin foil, skins on) for about 45 minutes, and while they were roasting i caramelized red onion and roasted red peppers with olive oil & ras al hanout in a sautee pan. meanwhile, i had already chopped fresh cucumber (julienne style). in assembling the sandwich, i spread a lebanese yogurt, labne (found at sultan's), on one piece of bread with honey mustard on the other. then, stacked the roasted golden beets, sharp cheddar cheese, caramelized onions, arugula micro greens and cucumber. a little messy to eat, but delicious.
the best part? johnny, a resident carnivore, loved it!
i just used the ingredients that we had, but i can see how it would be fun to keep experimenting and trying other yummy veggies.
